While spending summers in Italy with family as a young man Peter Roscini Colman had an idea: why couldn't he learn to make the delicacy of fine Italian Salumi and bring the process back to Vermont? Family friends introduced him to "norcini" - the famed butchers of Umbria - and a series of apprenticeships followed. Mentored by the best of the best, Colman learned the method, techniques and the centuries-old of salumi-making. At Dakin Farm we are proud to add Peter's old world salami to the other Vermont specialties we ship nationwide. From "round and earthy" Red Wine and Garlic, to "Tuscan Style" Fennel, to the Spanish "Chorizo Style" Spicy. Each salami is studded with melt in your mouth fat and a rich "artisanal quality" you'll appreciate in each mouth-watering bite. We offer:
