Shepherd's Pie |

1 lb ground beef

1 small onion, finely chopped

1/2 tsp garlic powder
|

1 tsp dried parsley

1 tsp dried sweet basil
|

1 tsp freshly ground pepper
|

1/2 tsp salt (optional)

2-3 bacon strips, cooked and crumbled

2 cup whole kernel corn
|

1 beef bouillon cube (optional)
|

4-5 large potatoes, mashed using 1/2 cup milk and 1 tbsp butter or margarine

1 cup boiling water
|

In a large skillet, brown the ground beef with the onion, garlic powder, basil, parsley, salt & pepper. Drain. Place in a 2-quart casserole. Add the crumbled bacon to the beef mixture. Dissolve the bouillon cube in the boiling water. Pour over the beef and bacon. Layer the corn on top of the beef. Spoon the mashed potatoes on top of the corn and smooth the top. Dot with butter. Bake in a preheated 350 degree oven for 30 minutes, or until the top is lightly browned. |
