Mushrooms Stuffed with Bacon, Basil and Cheddar
  1. 24 large mushrooms, stemmed
  2. 1/4 cup mayo
  3. 1/4 lb bacon cooked, chopped
  4. 4 tbsp chopped basil
  5. 1/4 cup bread crumbs
  6. salt and pepper to taste
  7. 1/4 cup cheddar cheese shredded
  8. 3 scallions minced
Mix bacon, bread crumbs, scallion, mayo and basil. Stuff into mushroom cap. Sprinkle with cheddar. Bake at 400 degrees F until cheese is melted and mushrooms are tender.
