Grafton Smoked Chili Cheddar, 8 oz. Cryovac Bar
Ingredients: Unpasteurized cow milk, habanero and jalapeño peppers, salt, pasilla peppers, cultures, enzymes
Smoked Chili Cornbread
Ingredients; 1 cup all purpose flour, 1 cup cornmeal, 2 tablespoons baking powder, 1 teaspoon baking soda, 1 teaspoon salt, 1 cup packed shredded Grafton Village Smoked Chili Cheddar, 1 cup buttermilk, 2 large eggs, 1/4 cup unsalted butter- melted and slightly cooled
Instructions;
- Preheat oven to 400 degrees. Grease or butter an 8"x8" metal baking pan or large cast-iron skillet.
- Whisk flour, cornmeal, sugar, baking powder, baking soda, and salt in a large bowl. Stir in cheese.
- Whisk buttermilk, eggs, and melted butter in separate bowl. Add buttermilk mixture to dry ingredients and stir gently until just mixed. Transfer batter to prepared pan.
- Bake until bread is golden on top and when a toothpick that is inserted into the center comes out clean - approximately 25 to 35 minutes (depending on baking pan).

We suggest pairing Grafton's Smoked Chili Cheddar with mustard, sour cherry compotem or dilly beans to balance and play off of the smoky and spicy flavors here. This cheddar is also at home on a cheese board with a drizzle of honey or eaten straight up as an afternoon snack. It is very meltable and a great addition to burgers, poutine or grilled cheese sandwiches.We also like a slice topped with a smear of mango chutney.
